This Web site has been set up to clarify and help explain the rearing and sourcing of Pigs for the Smokehouse in Gubbeen, we have a big straw pen set up in Gubbeen and a small amount of outdoor rearing, as the large workload in Gubbeen is more based on the food production. and dairy farming
As the demand for higher quality pigs grew with a very small amount of systems in place to help farmers rearing pigs outdoor or big straw pen set ups get a route to market or help get a higher price for the pigs, we wanted to keep a transparent system that customer and farmer all could see
For salami and charcuterie really good pigs are needed, So we set up guidelines and structures and visits to farmers to help create a system for a steady flow of good pigs that everyone would be happy with
We are glad to say that we this has been successful after many years of development, but could always be improved, as winter pigs in ireland are different to summer pigs and older traditional breeds more prone to getting fatty, or that big litters mean all pigs are ready at the same time when we have no available space to process any more pigs,
We have hit capacity in many ways for the numbers of pigs we can take and sadly cannot add any more pigs to our full books at present!
We want the term “our Piggy Co-op “ to represent a collection of like minded farmers rearing pigs to be consistent for our charcuterie, good for bacon and ham, of a fair price to pass on to the customner, and cover the ground for the range of sources from outdoor which to old breed, to indoor airy Straw pen reared, GM free feed ( The Gubbeen Reared )
